Now, they’re bringing back the secrets of true Mexican BBQ—cooked over embers, kissed by smoke, and packed with vibrant flavours. No previous experience is necessary. You’ll enjoy a Mexican BBQ feast and leave with the skills to recreate it at home.

Mexican BBQ is deeply rooted in tradition. Cooked over wood and coals, using bold marinades, and layering smoke with spice. After traveling through Oaxaca, Puebla, Chiapas and the Yucatán, Sam and Shauna are ready to share what they’ve learned. From fire-roasted meats and slow-smoked barbacoa to handmade tacos and punchy salsas, this class will teach you how to master the vibrant world of authentic Mexican BBQ. We’ll cook over open flames, experiment with traditional techniques, and discover how to balance smoke, spice, and acidity to create unforgettable flavours.
Cancellation Policy
Cancel up to 3 weeks before your class and receive a full refund. If you cancel less than 3 weeks before the class, you will be offered alternative, equivalent class dates without a refund unless the class is of lesser value (valid up to one year of initial purchase). If you cancel 4 days before your class, you could lose your payment as the place will be difficult to fill at the last minute and the produce will have been ordered. However, if we manage to fill your place, we can offer you a full refund.

- Conchita Pibil– Fire roasted Achiote Pork BBQ
- Tacos al Pastor – spit-roasted marinated pork or chicken with grilled pineapple
- Carne Asada – smoky, flame-grilled steak
- Handmade Corn Tortillas – fresh, warm, and pressed by hand
- Side dishes such as Elotes – grilled Mexican street corn with lime, mayo, and cheese
