Learn traditional American Slow and Low BBQ from one of the UKs most awarded Pit Masters, Sam Evans who has over a decade’s worth of experience in making BBQ. No previous experience is necessary. Everyone will enjoy a huge American BBQ feast at the end of class and will have gained a wealth of knowledge to be able to make perfect US BBQ at home.

Sam and Shauna will share the secrets behind their award-winning BBQ restaurant, Hang Fire Southern Kitchen.

Cancellation Policy
Cancel up to 3 weeks before your class and receive a full refund. If you cancel less than 3 weeks before the class, you will be offered alternative, equivalent, class dates without a refund unless the class is of lesser value (valid up to one year of initial purchase). If you cancel 7 days before your class you could lose your payment as the place will be difficult to fill at the last minute and the produce will have been ordered. However, if we manage to fill your place, we can offer you a full refund.

  • Mise en place: Work like a chef. Better prep, means a better cook
  • Smoking with wood splits, chips and chunks – when to add
  • Understanding the ‘stall’ and how to overcome
  • When to sauce, when to baste
  • Sauces and rubs

This is our second class with Sam and Shauna and it goes without saying that they are exceptional hosts. This American low and slow masterclass was informative and whilst more technical in content was none the less enjoyable, fun and engaging. Sam and Shauna are so very generous with their knowledge and answered all our questions. As ever delicious food and the picklebacks were a revelation! We will be back in the future. Thanks girls!

Wow! What an awesome day! I learnt so much about low and slow cooking. Be prepared to soak up a lot of information in the short time you’re there and definitely take a note book to record all the amazing tips and tricks of the trade. The ladies are so knowledgable and passionate about BBQ it’s hard not to be inspired! I had no idea that even the way animals are bread here vs the US could make such a difference to the cook of certain cuts. I will definitely be using all the things I learnt and trying out some slow cooking of my own.

We had the most amazing brisket, three types of pork ribs, armadillo eggs (not actual eggs ;-)) and fire cooked mac and cheese. Top that off with a little bit of sausage making. Phwaaar! Yes please!

Unlocked my creativity

I was a regular when Sam and Shauna had Hang Fire and was over the moon at learning from them both with the Christmas masterclass.

Long and short, it was a great day: lovely company, delicious food and a good laugh. If you're thinking of signing up, do it! You won't regret it.

I've been cooking American-style BBQ for a few years but found myself in a rut, cooking the same things repeatedly. The masterclass has opened my eyes to the versatility of the BBQ and how to create delicious 'normal' meals with a BBQ twist. I'm looking forward to using it to cook Christmas dinner this year.

A fantastic, fun and informative day!

I went along to the Festive Masterclass with admittedly very little bbq knowledge/skill, but was never made to feel anything but valued and included and now feel encouraged and confident to use the tips, tricks and information I learned during a wonderful day with Sam and Shauna. Such a warm and welcoming couple, they made me feel completely at home in their gorgeous garden and impressive outdoor kitchen. Sam’s cooking skills are another level and she made the most delicious meal with apparent ease, but I know how much prep and planning had gone before in order to make it so seamless! We all got to try out butterflying individual pork loins and filling them with a delicious stuffing which we got to bring home once they had been cooked on the bbq. I learned so much while having the best fun and met some wonderful fellow classmates while eating amazing food! Thank you so much Sam and Shauna for all your hard work in making this a day to remember. I’ll see you next year!
